Centaurs are a result of the Forced Evolutionary Virus being merged with multiple creatures. The ones found in the Capital Wasteland were likely created in Vault 87, just like the Super Mutants. They're often used by the Super Mutants as guard dogs because they have the highest Perception in the game.
Their ranged attack involves spitting radiated slim at you, the attack will do little damage to your Hit Points, but it will strongly increase your Radiation level.
